Ours is a classic panettone, with almond icing; freshness and enveloping consistency are its distinctive elements.
I Dolci della Regina, our pastry shop, is a small boutique overlooking the pedestrian street of Garda. "Unconventional", with a production mostly limited to consumption on the same day, rigorously fresh creations and a passionate creator.
Annalisa Tedeschi with visionary intuition fifty years ago began to offer "her dessert trolley" to the guests of the family hotel. A pastry proposal that soon became one of the distinctive features of the restaurant of the Regina Adelaide hotel (www.regina-adelaide.it) and which, thanks to the collaboration with various master pastry chefs including the leavening expert Giuseppe Appezzato, in 2009 saw the creation of a small laboratory and delightful sales point also open to external customers, adjacent to the hotel.
In those years, Pan’Ottone was born, which playfully borrows its name from Otto I of Bavaria, husband of Adelaide of Burgundy, patron of the hotel.
Always prepared with the same sourdough starter, it is created entirely by hand, respecting resting and leavening times. Produced without any preservatives, in small batches to guarantee freshness, it is sold only in the pastry shop, freshly baked; it is also possible to order it on the online shop (https://shop.regina-adelaide.it/) with shipments throughout Europe.
Selected, excellent ingredients, such as candied Navel oranges from Sicily, Bourbon vanilla from Madagascar, Australian raisins, almonds from Puglia, Belgian butter, give it depth and persistence of flavor. The dough is yellow, honeycomb, enveloping: a hymn to the throat and the most authentic flavor of Christmas.
Before eating it, as per tradition, it should be warmed a little, to enhance its aromas. Here too, a suggestion that brings to mind the most traditional Christmases: leave it on the radiator for about ten minutes. One slice will lead to another!
Even the velvety and material effect of the packaging, embellished with dry prints, recalls the magic of the packages under the tree. An idea by Nicolò, Annalisa's son who, with the same propensity for the most authentic values, passionately continues the path he has undertaken.
